Green veggie mix with avocado
- 1 potato
- 1/2 cup beans or peas
- 1 baby marrow
- 1/2 avocado
- Peel and chop the potato into chunks
- Place the trivet in the bottom of the Instant Pot inner pot and add 1 cup of water
- Add the chopped potato and 1/3 cup water to an ovenproof bowl and place on top of the trivet.
- Turn on the Instant Pot to “Steam” and select 10 minutes.
- When the timer ends, quick release by turning the steam release to the venting position allowing the steam to escape, the valve will then drop and the lid will unlock.
- Add the remaining vegetables to the potatoes and close the lid.
- Turn on the Instant Pot to “Steam” and select 2 minutes.
- When the timer ends, quick release by turning the steam release to the venting position allowing the steam to escape, the valve will then drop and the lid will unlock.
- Drain the water from the vegetable and set it aside.
- Add the vegetables to a blender and coarsely puree, using saved water if needed
- Remove the skin and seed from the avocado and mash
- Stir the mashed avocado in with the puree vegetables
